Tuna Sandwich

Okay, I remembered to post a healthy recipe for today, here it is, a healthier version of the tuna sandwich:

3oz tuna (packed in water)
1 tsp. olive oil
1 tsp capers (we don't use these)
1 Tbsp. chopped red onion
1 boiled, chopped egg white
2 slices whole grain bread
Lettuce (optional)
1 tsp. mustard

Drain tuna. combine with oil, capers and egg. Spread mustard, or combine with other ingredients. Spoon mixture on bread, add lettuce.

Hmm, a bit odd

Quincy woke up with a stuffy, runny nose. Miles has had it for the last few days, so I'm guessing Quincy got it from Miles. So I, of course, proceed to use the nose bulb syringe thing to help clear out Quincy's nose. The kid loved it. He giggled and laughed every time I had it up his nostril and sucked things out. He got excited as he saw it come towards his nose. Just odd.

Just playing

The boys love Miles' GeoTrax train set. Miles plays with it many times a day. And Quincy watches the trains and planes go around the track. If the train stops, or isn't running for any reason, Quincy gets all upset, flapps his arms and makes noises, sometimes cries until the train starts going.
Often Miles likes to lay down on the floor to play with the trains, I'm not entirely sure why, but he does it quite a bit.
This is Quincy's front row seat to the action.

Daddy's Eyes

Get Fit week 3

We had a pretty good week of working out. The kids got up early a couple mornings, so Miles got to watch us exercise. He was pretty bored after about 2 minutes. And I had to interrupt my work-out a few times for Quincy, and end early one day to feed him. As far as eating goes, Mike and I both faltered on Wednesday. He had some brownies from the treat table at work, I picked up a package of cinnamon rolls at the grocery store, and ate them. Yup, the whole package. But we were good the rest of the week.

Just this morning I realized I forgot to post a healthy recipe on Wednesday, I will try better next week.

Meet Gogo


Gogo is Miles' new pet fish. Aunt Kerry & Uncle Fred got Miles a Sesame Street fish tank for Christmas. Today we went to the pet store and Miles picked and named his own fish. We have no idea where the name gogo came from, the only guess I have is that Miles played the card game Go Fish yesterday (for the first time).


Anyway, Miles was very excited as the fish was taken out of the tank at the pet store. Once the fish was in it's bag and given to us, Miles said hi to his fish and waved to it. It was adorable to watch. Then he almost killed the poor thing a few times while trying to get a good grip on the bottom of the bag. He loves to check on Gogo, and is very excited to feed him.

It may look like boys are actually playing with this toy together, but really one of them is taking it from the other. Miles is normally the one taking, but Quincy is getting better at it every day.

Get Fit update

So we have now been working out for two weeks, and we haven't missed a day of workout yet. Mike has been good with cutting out the junk food and limiting his portions. I slipped yesterday when I made a carrot cake with cream cheese frosting. It was a package mix I had in the cupboard that was just calling to me all week. The good thing is that Mike doesn't like carrot cake or cream cheese frosting, so my downfall didn't threaten him at all. Now, once this carrot cake is done, no more junk food.

Beans beans everywhere

Quincy started eating green beans yesterday, and this morning they of course came out in nearly the same form. Tonight, more green beans for dinner, and, without him doing any of the feeding, he still managed to get green beans all over his face, hands, bib, clothes and hair. And he apparently stored some in his cheeks for later. Just as we were finishing our dinner, about a half hour after he had been all cleaned up, we noticed that he again had green beans on his shirt, coming down his chin, and in his hair. And I just kept finding the beans matted in his hair throughout the evening.

Un-Fried French Fries

Here is my first Wednesday healthier recipe. These are very tasty fries that are baked.

1 - 1/2 lbs baking potatoes
1/4 cup light Italian dressing
1/4 cup Parmesan cheese

Preheat oven to 425F. Wash potatoes; pat dry with paper towels. Cut into 1/4 inch thick strips; transfer to large bowl. Add dressing and grated cheese; toss well.

Arrange potatoes in single layer on 2 large baking sheets sprayed with cooking spray.

Bake 12 minutes. Turn potatoes over with large spatula. Continue baking 10-12 minutes or until golden brown and crisp.

To make these fries even healthier, omit the dressing and cheese, and simply spray the potatoes with cooking spray.

Get Fit Challenge

Since it seems that Mike and I are not the only ones starting a new plan to try to get healthier, I thought I would put a challenge out there to anyone that wants to play along. I will post once a week, on Fridays, letting you know if we are still exercising, and if we missed any days that week - for exercise or healthy eating. You leave a comment doing the same. On Wednesdays I will post one new healthy recipe. You try to leave a comment with a helpful get healthy tip - exercise, food, motivation, etc.

At the end of 90 days, on or about April 11, I will post our before and after pictures, and those of anyone else that sends them to me. I will also post how much we lost and any change in clothing sizes, you leave comments also letting us know how much you lost, old/new pants sizes, etc.

So who wants to join us? Leave a comment if you do, and if you haven't said so already, let us know if you have any specific get fit plan or program that you are following. Also, if you have any specific goal that you want to reach in the next 90 days.

Getting fit

Mike and i have finally started working out again. We started on Monday this week, and haven't missed a day yet - not for lack of trying. We haven't worked out together in a while - not since the first year of marriage. We are doing the Power 90 workout, it goes in 90 day segments. We are also trying to eat healthier. But since I am still nursing Quincy, I still allow myself some extra goodies. Now that he is starting solids, I'll have to taper my goodies as he increases his solids.

I will try to post here every so often to update you all on our progress. We took some 'before' pictures of ourselves this morning, so in 3 months we'll take some 'after' pictures and see how well we did.

Quincy started solid foods


Well, as solid as thinned out rice cereal can get. Quincy has been very eager to start eating food, and he got his first chance last night. He seemed to like it - reaching for more and eating almost the entire amount we prepared. He got upset if Mike took too long between bites.

Visit to NY

Whew, we are finally home from our trip to New Hampshire and New York to see both sets of Grandparents, Aunts, Uncles, cousins and extended family and friends. It was a long trip with two little ones, but great to see everyone. The kids got more toys and books than they know what to do with - it is going to take weeks to figure out where to put everything!

Our visit to NY consisted of more presents, more cookie decorating and more sledding, as well as lots of other fun stuff.
